Grilled Tuscan Steak (Serves 2 ) - Recipe:

Ingredients:

  • 2 Whole Garlic heads (roasted)
  • 3/4 Cup Shredded Parmesan Reggiano
  • 1/4 Cup Chopped Rosemary
  • 1 Tablespoon Balsamic Syrup (or reduced balsamic vinegar)
  • 1 Tablespoon Olive oil
  • 1 Teaspoon Grey Salt
  • 1 Teaspoon Fresh ground pepper
  • 1 Lemon Sliced into wedges
  • 2 Bone In Rib Steaks (aka Cowboy Steak)

Roasted Garlic:
Preheat oven to 425 degrees. Slice off top of garlic heads exposing the top of garlic. Season with salt, pepper, and drizzle with olive oil. Wrap each garlic head in aluminum foil and cook in oven for 15-25 minutes or until tops are light brown. Set aside to cool. Remove garlic and set aside.

In a bowl add roasted garlic, parmesan, rosemary, olive oil, balsamic syrup, salt and pepper. Mix ingredients into a paste with a fork. Set aside.

Grill steaks to desired temperature. 1-2 minutes prior to removing from grill, spread roasted garlic paste on top of steak. Remove from grill and let steaks rest for 2-5 minutes.

Serve steaks with lemon wedges on the side.
